    Variety of Dosa -Egg Dosai- Spicy Chutney Adai with Breakfast Moong Dal Sambar
    INGREDIENTS:
    Oil - As Required
    Red chillies - 5 nos.
    Mustard seeds - 1 tsp
    Cumin seeds - 1 tsp
    Hing - ½ tsp
    Sambar powder - 1 tsp
    Rice - 100gms
    Urad dal - 60gms
    Turmeric powder - ½ tsp
    Onion - 1 no
    Green chillies - 4 nos.
    Curry leaves - 2 spring
    Coriander leaves - 1 bunch
    Egg plants - 300gms
    Tomatoes - 2 nos.
    Tuvar Dal (boiled) - 1 cup
    Salt - as per taste
    Urad dal - 60gms
    Water - As Required
    Yogurt - ½ cup
    Cashew nut - 10 nos.
    Curry leaves - 1 bunch
    Ginger powder - 1tsp
    Rock salt - ½ tsp
    Pepper - 1 tsp
    DIRECTIONS:
    Heat oil in a pan, add red chilli, mustard seeds, cumin seeds wait they till splutter.
    Then add hing, sambar powder, turmeric powder, onion, green chillies, ghee, curry leaves, coriander leaves,egg plants, tomatoes saute it till light brown in colour.
    Now add boiled toor dal and seasoning salt mix it and cook it for 10 minutes with the lid closed.
    Take rice into a bowl, add urad dal and soak it in water for 4 hours. Grind it into batter & ferment it overnight.
    Take yogurt in a bowl, add hing water, cashew nuts, curry leaves, ginger powder, crushed cumin seeds, rock salt, pepper powder, and add dosa batter mixed it well.
    Heat a dosa pan, pour the dosa batter by topping up with onions, coriander leaves, ghee, chilli chutney spread it and cook it nicely.
    Make another dosa on a pan, pour the dosa batter, adding egg, onion, coriander leaves, ghee cook it on both sides.
    Now, transfer into a plate by topping up with gunpowder and some ghee.
    Now ready to serve with dosa and sambar breakfast recipe.
