    ■Cocoa almond cream
    50g unsalted butter
    50g sugar
    1 egg
    50g ground almonds
    8g cocoa powder
    5g rum

    ■Mont blanc cream
    240g chestnut paste
    30g unsalted butter
    50g heavy cream
