We are back at it again: mummy jis dhaba!! Since you all love this series so much, we thought why not try another loved by many across the world Indian dish: samosas!! Approx 10x potatoes (can be more or less depending on the amount you are cooking)
3x green chillis
1 teaspoon of garlic paste
1 teaspoon of ginger paste
1x red onion
1 cup of peas
2 tablespoons of ghee
Oil (whichever form of oil you'd like for frying)
Red chilli powder
Amchur powder (mango spice)
Firstly, you will need to make the dough for the samosa - to do this, take white flour (amount depends on the quantity you are making - we used approximately a bowl for ours which made 10 samosas), and mix with 1 tablespoon of caraway seeds, 1 teaspoon of salt, 2 tablespoons of ghee, and knead this mixture together very hard with your hands for around 5-10 minutes. This mixture should be hard to the touch - and set aside for approximately 20 minutes.
Whilst this is sitting, peel and boil the potatoes and boil peas also so they are soft, and chop the potatoes up into small pieces as shown in video. Next, heat up a little oil in a frying pan with 2 teaspoons of cumin seeds, and grind your 3x green chillis and onion together, and add into the oil to fry. Straight after adding these, add in the peas, 1 teaspoon of garlic and ginger paste, and cook for 2-3 minutes stirring often. Next, add 2 teaspoons of salt, 1/2 teaspoon black pepper, 1/2 teaspoon of red chilli powder, 1 teaspoon of garam masala, and 1 teaspoon of amchur powder. Stir these together well, and then add the chopped potato, and mix this will into the spices. Next, get the dough you had previously made, cut/divide this and roll it out thinly, and wrap into a cone shape and fill with potato mix, and close well. Fry this in some hot oil on your stove, and they are ready to eat: yum! This can be eaten on its own or with other items (yoghurt, chickpeas, onion, sauces etc)
