    Ash gourd Vadiyams are made from urad dal and ash gourd. Even before drying them in sun, they can be deep fried or shallow fried in oil. This is a very delicious side dish that goes with rice. You can make this in any season. But to sun dry them, Summer is the best

    Budidha Gummadikaya/Ash gourd batter is sun dried and stored for atleast 6 months. These fitters can be deep fried and taken as side dish with dal and Rice.

    Budida gummadikaya Vadiyalu/Safed kaddu ke papad/Ash gourd Fritters are usually made in Andhra. These are very light and tastes good. Here is the easy method to prepare them at home.

    Ingredients

    Wintermelon/ Gummadikaya - 500 gms
    Urad Dal/Black gram - 1 cup
    Green Chilies - 50gms
    asafoetida - 1 tsp
    Salt - 2 tsp

    Step 1 : Cut the ash gourd into bite size pieces.
    Mix salt and place heavy weight so that water in ashgourd drips

    Step 2: Soak Urad Dal for 2 hours prior to the final preparation

    Step 3: Prepare the Urad dal batter and mix with ashgourd pieces.
    Grind Urad dal, green chilies , salt and asafoetida. Add this to ash gourd pieces

    Step 4: Frying the vadiyam. Take a small ball of batter and spread with fingers. Gently drop it in oil. and fry till they are golden.
