    Chocolate Mousse Pudding:

    Chocolate 125 gm
    Butter 100 gm
    Coffee water 30 ml
    Eggs 2
    Egg yolk 1
    Flour 25 gm
    Caster sugar 150 gm
    Ground almonds 25 gm

    Yogurt 50 gm
    Whipped cream 150 gm
    Honey 2 tbsp
    Vanilla essence 1/4 tsp
    Chocolate 50 gm

    Heat chocolate, butter and coffee water until it melts. Then allow it to cool down. Now combine sugar, eggs and egg yolk, beat well until creamy. Then add all the dry ingredients and fold well. Now add chocolate mixture, mix properly. Then add the mixture to the mould and bake it in an oven on 180 c for about 20-25 minutes.

    Combine cream, yogurt, vanilla essence and honey. Mix well and pipe the pudding. Lastly melt the chocolate and decorate.

    Tropical Mango Cake:

    Orange juice 100 ml
    Lemon juice 20 ml
    Caster sugar 125 gm
    Cinnamon 1 stick
    Water 400 ml

    Butter 125 gm
    Caster sugar 125 gm
    Orange peel 100 gm
    Salt 1 pinch
    Eggs 2
    Semolina 125 gm
    Coconut 125 gm
    Ground almonds 200 gm
    Baking powder 1 ½ tsp
    Orange juice 50 ml
    Mangoes 2-3
    Whipped cream 200 gm

    In the water add sugar and orange juice, cook and prepare a syrup. Then allow it to cool. Then beat butter and sugar together. Now add orange peel and salt, mix well. Then add eggs and beat a little. Now add all the dry ingredients and orange juice. Mix properly. Then add the mixture to the mould and bake it in an oven on 170 c for about 45-50 minutes. Remove and allow it to cool. Now add sugar syrup on top of the cake. Lastly decorate with cream and mangoes.

    Chocolate Amaretti Cookies:

    Roasted almonds 150 gm
    Caster sugar 115 gm
    Coco powder 15 gm
    Icing sugar 30 gm
    Egg whites 2
    Cream of tartar a pinch
    Vanilla or almond essence ½ tsp

    Combine roasted almonds and half quantity of caster sugar, grind well. Then sieve icing sugar and coco powder; and add to the almond mixture. Now combine egg whites and cream of tartar, beat well until it stiff peaks. Then add the remaining caster sugar and beat well. Now add vanilla or almond essence and all the dry ingredients, fold well. Then add the mixture in a piping bag and pipe on the baking sheet. Place almonds on top. Now bake it in an oven on 160 c for about 12-15 minutes. Remove and serve.
