Strawberry Muffins | Quick and Easy Healthy Muffins Recipe

  • Easy and healthy strawberry muffins - fluffy and moist full of fresh strawberry flavour with hint of citrus.

    2¼ cup (340 g )Plain Flour
    1 cup Pain Yoghurt
    ¼ cup Oil
    2 Eggs
    1 Cup Caster Sugar
    1 cup Chopped Strawberries.
    2 tbsp Lemon Juice
    1½ tsp Baking Powder
    Icing Sugar for Dusting

    Preheat oven to 180° C or 350°F.
    In a mixing bowl add sugar, eggs, oil and yoghurt. Mix well with whisk. Add lemon juice and combine well.
    In another bowl add flour and baking powder mix them with spatula. Pour the wet ingredients into it and mix until combined well. The mixture will be bit lumpy, its not required to be smooth so don't over mix.
    Add strawberries and fold them in. Line the muffin tray with muffin cases or if you are baking without them grease the tray with oil. Pour the mixture evenly.
    Bake in the oven for 20-30 minutes or until golden on top and skewer comes out clean.
    Allow the muffins to cool down before turning them onto wire rack. Once they are at room temperature dust them with icing sugar.
