Food Science Short Course Day 5 - Food Engineering & Food Processing
- Published on: 1/24/2014
Preview some of the topics you will learn about in the Rutgers 5-day Introduction to Food Science Summer Short Course.
In this clip, Rutgers faculty member Mukund Karwe talks about his area of expertise: food engineering, which includes food manufacturing and food processing. Here he demonstrates two aspects: the use of extrusion in food manufacturing and high pressure processing to safely preserve flavor and texture with the degrading effects of heat.
You can also learn about another topic area covered in the course -- emulsions -- by watching this video: https://www.201tube.com/video/pToiEc7F63E/video.html
If you like what you see and want to learn more, check out the Rutgers Introduction to Food Science 5-day class, held every summer in August. You'll learn more about food engineering as well as other new and emerging technologies used in food science, from food safety to sensory evaluation and much more.
